Step-by-step cooking
Step 1:
To freeze, take well-ripened berries. Select large and dense berries in order to freeze them separately, and small and softer ones can be ground. Do not freeze overripe berries. Only the one collected on this day is suitable for freezing. The one that has lain even 24 hours in the refrigerator will lose some vitamins, wither, darken. Sort out the berries, remove all the crumpled ones. It is not necessary to wash freshly picked berries before dry freezing.
Step 2:
There are several popular ways to freeze: As A whole - Arrange the selected berries and hold them on a tray for a little while so that the little pests run away. Then cover with a film and send it to the freezer for a few hours. After the berry freezes, it must be poured into containers with a tight-fitting lid or into PE bags with a lock. Write the label and put it in the freezer for long-term storage.
Step 3:
You can make a delicious and healthy PUREE. To do this, rinse the prepared berry under cool running water.
Step 4:
Pour sugar over 1kg of berries: 100-200g of sugar./ If you add more sugar, the puree in the molds will not freeze, and in the bottles it will slowly but freeze /.
Step 5:
Grind with an immersion blender, stir. Let stand, stirring until the sugar is completely dissolved.
Step 6:
Then pour into small plastic bottles with a wide neck, fill before reaching 1 cm to the top. As an option: pour into silicone cupcake molds / take new ones or degrease well / and into the freezer. Transfer the frozen puree each into an individual PE bag, then into a common PE bag with a lock for freezing or a container. + Marking and for long-term storage.
Step 7:
WHOLE BERRIES IN PUREE: Such a freeze is good to make from raspberries. The berry also needs to be cleaned from litter, washed, despite the fact that the berry is very delicate. Pour sugar on 1kg of berries: 100-200g of sugar and stirring, let it dissolve. Ripe berries will turn into mashed potatoes without the participation of a blender or a pusher, and slightly unripe ones will remain intact. Further as described above.
Step 8:
So you can freeze not only berries, but also vegetables, fruits too. I rub the pumpkin, put it in portions in bags and freeze it in piles. I cut the ripe Bulgarian pepper into strips, put it in a disposable substrate in a bag and put it in the freezer after leveling it. You can also freeze tomatoes, zucchini, eggplant, radishes.. If only the volume of the freezer would allow!
Step 9:
How to properly defrost a berry: Rinse the whole berry with cold water in a colander, let the water drain and leave at room temperature. Puree, jelly - defrost on the middle shelf of the refrigerator. Is it possible to defrost in the microwave ? Yes, on the fast defrost mode. Check if the berry has thawed every minute. /I prefer the natural process/.
Step 10:
Where are frozen berries used ? Frozen berries can be used to prepare fruit drinks, compotes and jelly. They are used as a component for dairy and alcoholic beverages, smoothies. They serve as the basis for creating creams, sauces, mousses, jellies. Ideal for making ice cream and sorbet. They can be stuffed with pancakes, dumplings, pies and pies, cupcakes, cottage cheese casseroles.. But they are not suitable for decorating cakes and desserts, for fruit salads.
High-quality harvesting for the winter provides, first of all, compliance with all conditions of freezing and storage.
Experts believe that the optimal temperature regime for harvesting fresh berries and fruits is within minus 18-24 ° C. In any case, do not re-freeze after defrosting.
At this degree, the product can be preserved without loss of medicinal substances for up to a year – in fact, until the new harvest. But, it is important to understand that after 3 months, the number of useful elements will begin to decrease, so do not overexpose the berry for a very long time in storage. Such a product will lose all its healing properties.
During storage, it is necessary to maintain the desired temperature regime in the chamber at all times.
If you follow the rules exactly, the berry will retain its color, taste, aroma.
