Garlic Scape Paste for Winter
A tasty, healthy seasoning for meat and fish dishes! Many people unfairly write off garlic scapes as weeds and throw them out. But they make a delicious, fragrant garlic paste. Use this seasoning with meat or vegetable dishes, with fish, or in salad dressings.

Step 1:
Prepare all the ingredients. The recipe lists amounts for 1 kg of garlic scapes that are already trimmed and cut.

Rinse the scapes in cold water, dry them, cut off the tough part, and keep only the soft green part. Cut up the washed scapes and run them through a meat grinder; for a paste-like texture, it's best to grind them twice.

Step 3:
Add the salt and vegetable oil to the mixture and stir. To use the paste year-round, here's how I usually store it. I leave a little on the top shelf of the fridge - this seasoning keeps for exactly 6 weeks there.

Step 4:
I divide the rest of the seasoning among plastic bags and freeze it, taking it out as needed. Unlike a cooked paste, frozen paste doesn't lose its taste or aroma.

Right now, in zucchini season, it's delicious to stir this paste into mayonnaise in place of regular garlic when making zucchini with mayonnaise. The garlic scape paste is ready! For a more detailed recipe, watch the video. Enjoy!
