- This cornelian cherry jam calls for pitting the berries first. It's not hard to do. Start by sorting the berries, discarding any spoiled ones, then rinse them in a colander. Pour the clean berries into the slow cooker bowl and add enough water to cover them completely. Set the "Cook" program, bring the liquid to a boil, and turn off the heat right away.
- Next, pour the contents of the bowl into a colander and wait for all the liquid to drain. Set the colander over a suitable container and crush the berries with a potato masher. After blanching, the flesh separates easily from the pits, which you can simply pull out by hand.
- Return the pulp to the slow cooker bowl, cover it with the sugar, and let it stand for 5 hours. When the time is up, add the water, set the bowl in the slow cooker, and close the lid. Set the "Stew/Simmer" program for 1 hour.
- While the jam cooks, you can go about your business. In the meantime, get the jars and lids ready. Small jars are best — you'll end up with about 1.5 to 2 liters (1½ to 2 quarts) of jam total. Sterilize the jars and lids however is easiest: in the microwave, in the oven, or over steam.
- The jam is done once the timer beeps. Go back to the slow cooker, open it, and ladle the jam into the sterilized jars while still hot, then seal with the lids. Let the jam cool at room temperature — you can wrap the filled jars in something warm and turn them upside down.
- Move the jam to its permanent storage spot.
