Seedless Cornelian Cherry Jam

- Cornelian cherries have plenty of health benefits, which is why jam made from them is considered good for you—though it's always worth remembering that everything is best in moderation ;) They're easy to gather: just spread a sheet of plastic or some burlap under the tree and give it a shake. The ripe berries drop right off the branches, while any unripe ones can be left to finish ripening indoors for a few days. And then... 1. Sort through the cornelian cherries and rinse them. Use fresh, ripe berries with no dark spots or blemishes. Transfer them to a heavy-bottomed pot and cover with the water. Set the pot over medium heat and bring to a boil. Take it off the heat, cover tightly, and let stand for about an hour, until cooled. 2. Working in small batches, press the cooled berries through a colander to make a purée, leaving the pits behind in the colander. 3. Return the purée to the heavy-bottomed pot, add the sweet white wine, and stir in the granulated sugar. Set it back over medium heat, bring to a boil, then lower the heat to its lowest setting. Cook the jam for about 30 minutes; it should thicken up. 4. Have small sterilized jars ready ahead of time. Ladle the hot jam into the jars and seal tightly. Turn the jars upside down and leave them until completely cool, then move them to a cool spot for long-term storage. All done!
