Dogwood has many useful properties, therefore jam from it is considered useful. Although you should always remember that everything is good in moderation ;) Dogwood is easy to collect. To do this, you just need to lay a film or burlap under the tree and shake the tree. Ripe berries are easily separated from the branches and fall down. Unripe berries can be left to ripen indoors for several days. And then...
1. We sort out the dogwood and mine. For jam, we use fresh and ripe berries, without darkening and bad places. We shift the dogwood into a saucepan with a thick bottom, fill it with water. Put the pan on medium heat, bring its contents to a boil. Then remove the pan from the heat, cover tightly with a lid and leave for an hour (until cooling).
2. We throw the cooled dogwood into a colander in small portions and wipe it to make a puree, and the bones remain inside the colander.
3. Put the puree back in a saucepan with a thick bottom, add sweet white wine to it, pour granulated sugar. Again put on medium heat, bring to a boil, then reduce the heating to a minimum. We cook jam for half an hour. It should thicken.
4. We prepare small sterile jars in advance. The finished hot jam is laid out in jars, hermetically sealed with lids. We put the cans upside down and leave them to cool completely. Then we transfer the jars of jam to a permanent storage place - cool.
