Blackberry Souffle with Condensed Milk

  • Rinse the blackberries, cover them with water (1/2 cup), and bring to a boil. Soak the gelatin in the remaining water until it swells. While the berries are still hot, press them through a sieve. Stir the sugar into the hot purée until well combined. Warm the swollen gelatin over low heat in a water bath until the granules dissolve completely, then stir it into the berry purée. Beat the purée and gelatin together with a mixer on low speed until you have a stable foam. Pour in the condensed milk and beat once more. Divide among molds and let set.
