Fondant Icing for Easter Kulich

To make this simple icing for Easter kulich, you need only a handful of ingredients every cook has on hand: sugar ground into powdered sugar, a lemon for its juice, and a little hot water. That's the whole secret to this easy, very tasty sweet-and-sour kulich icing.

If you don't have powdered sugar on hand, it's easy to make your own in a regular coffee grinder.

Wash the lemon, pat it dry with a towel, and roll it firmly across the countertop, as shown in the photo. This makes it easier to squeeze out more juice with less effort.

Cut the top off the lemon and squeeze out the juice. You only need a little - about two spoonfuls - so there's no need for a special juicer.

Add the powdered sugar gradually.

Pour in a couple of tablespoons of hot water from the kettle. Right away, start stirring the powder and liquid hard with a spoon or fork until it turns white.

You may need a little more powder or water. It's easy to tell: if the icing is clear and too runny, add more powdered sugar.

You can use an immersion blender for this.

If the icing is too thick and won't move with a fork or blender - crystallizing before your eyes - you've added too little water. Just add more hot water and beat the mixture again.
