There are several kinds of fudge. More precisely, the name is used for different products. The first is the very fudge made in confectionery factories. This is a type of candy made from boiled and later set sugar syrup, with or without milk and cream.
The second is a viscous mass meant for glazing any sweet pastry or cake. That kind is usually made at home.

The simplest to make and in terms of ingredients is sugar fudge. It needs just three products: sugar, water and lemon juice. The result is a snow-white mousse that sets as it hardens. It's used to decorate Easter cakes, doughnuts, cupcakes and cookies. For color you can add any dye, natural or artificial, as well as cocoa. As a semi-finished product, sugar fudge can be kept in the fridge for years. When needed, you just warm it up before use. The cook decides during preparation which fudge to make: viscous or not. If you whip it longer, the consistency will be less viscous.
More "complex" to make are the milk and cream fudges. In essence it's the same sugar fudge with milk or cream added. Of course, it shouldn't be kept for years now, even in the fridge.

Any fudge, if you like, can be turned into icing or candy — that's up to the home confectioner. It sets beautifully and holds its shape. If you have silicone candy molds at home, the fudge is just right for them (or they're just right for it).
