    How do you grill silver carp on a grate? Start by prepping the fish. You can use frozen carp, but fresh gives you tastier, juicier results. Scale the fish, then remove the guts and gills. Rinse the carp and pat it dry with a kitchen towel or paper towels to remove excess water.

    Cut the fish into medium serving pieces. You can freeze the head to make a rich fish stock later, or throw it right on the grate to cook over the coals with the rest of the fish.

    Trim the fins off the fish.

    Make the marinade. In a small deep bowl, combine the sour cream, salt, pressed garlic, and dry seasonings. Use whatever spices you like — a ready-made fish blend is perfect. Here I used a ground pepper blend, basil, oregano, and a store-bought fish seasoning.

    Add the marinade to the fish. Rub the seasoned sour cream evenly over every piece. Let the carp marinate in the refrigerator for at least 1 hour.

    Light the grill. Once the wood has burned down to coals, you're ready to cook the fish.

    Wash and dry the grate well. Brush the metal bars with vegetable oil so the fish won't stick. Grill the carp until done, turning it from side to side now and then.

    The carp is ready when the skin takes on a golden, appetizing crust. Pierce a piece with the tip of a knife — if the juices run clear, the fish is done. Don't leave the pieces over the coals too long, or they'll dry out.

    Serve the carp hot or chilled with vegetables or a fresh salad.

  • Cooking time on the grill depends on a lot of things — the size of the pieces, the amount of coals and how hot they are, the type of grill, and so on. On average the fish is done in 20–30 minutes. If you're grilling the head, halve it lengthwise so it cooks through better. Give it a try — enjoy!
  • If you're using a store-bought spice blend, always check the label — many already contain salt, so account for that or you risk over-salting the dish.
  • Because everyone's tolerance for salty, sweet, bitter, sharp, sour, and hot is different, always add spices and seasonings to your own taste. If you're using a seasoning for the first time, go easy — some, like chili pepper, are especially easy to overdo.
