Pork and Potatoes in Sour Cream

Pork and potatoes in sour cream is surprisingly simple, yet it makes a delicious hot meal for the whole family, equally at home at a dinner party or a hearty weeknight supper.     1. Preheat the oven to 350°F (180°C), using convection or top-and-bottom heat. 2. Peel the potatoes, rinse them well under running water, and pat dry on paper towels. Cut them into small cubes. 3. Rinse the bell pepper, cut out the stem, and remove all the seeds and membranes inside. Finely dice the remaining pepper flesh. 4. Grate the hard cheese on the coarse side of a grater. 5. In a large bowl, toss the potato cubes, diced bell pepper, and grated cheese together. Transfer the mixture to a baking dish or deep baking sheet and spread it out in an even layer. 6. Peel the garlic, rinse it, and press it through a garlic press or grate it finely. Stir the garlic into the sour cream, then thin the mixture with the warm chicken broth. Mix well and pour it over the potatoes. This sour-cream sauce keeps the potatoes juicy and tender. 7. Rinse the pork fillet and pat it dry with paper towels. Cut the meat into serving-size chops and lay them right on top of the potatoes in the baking dish. Season with salt and ground black pepper to taste. 8. Cover the dish with foil, crimping the edges tightly so no steam escapes, and bake in the preheated oven for about 40 minutes. 9. Remove the dish and take off the foil. Return it to the oven for another 5 minutes or so, until an appetizing golden crust forms on top. Divide among plates and garnish with chopped herbs. Serve warm. Enjoy!
