Shrimp in Creamy Garlic Cheese Sauce

I honestly didn't expect this to turn out so good — you have to try it! Cooked this way, the shrimp come out incredibly tender and flavorful. If you don't have hard cheese on hand, a tablespoon or two of processed cheese works in its place.

    How do you make shrimp in creamy garlic cheese sauce? First, thaw the shrimp. Take them out of the freezer ahead of time and let them sit at room temperature until fully thawed. If you need them thawed quickly, cover them with cool water. Which shrimp should you use? Jumbo or tiger shrimp are ideal, but regular ones work too.

    Pat the shrimp dry with paper towels to remove any excess moisture.

    If your shrimp still have their heads and shells, peel them. I used pre-peeled shrimp with the tails left on. Be sure to devein each shrimp along the back. Peel the garlic and rinse it under clean water.

    Heat the vegetable oil in a heavy-bottomed skillet. Add the shrimp and cook, stirring constantly so they cook evenly, until they curl up and turn pink. This took me about 6–8 minutes.

    Add a pinch of salt, the finely minced garlic, ground black pepper, and paprika if you like. I also tossed in a pinch of nutmeg and some coarsely ground red pepper flakes. Stir and cook for a few seconds.

    Pour the cream into the skillet and stir. Once it comes to a simmer, lower the heat to its lowest setting and cook the shrimp for about a minute.

    Sprinkle in the grated hard cheese and stir. Let it sit until the cheese melts. At this stage you can use processed cheese instead of grated hard cheese.

    To finish, add the finely chopped fresh herbs to the skillet. I had some frozen spinach in the freezer, so I added that to the shrimp too. Parsley or dill work great here.

    The shrimp in creamy cheese sauce are ready! For a pop of color, scatter a little red onion, sliced into slivers or diced, over the finished dish.
