Vareniki with Strawberries

Step 1:
Let's gather the ingredients for vareniki with strawberries. Any berries will do, but smaller ones are easier to wrap. If your strawberries are too large, cut them into two or three pieces.

To make the dough, first dissolve one teaspoon of salt in warm water.

Crack an egg into the sifted flour and pour in the salted water in a thin stream. Knead a soft dough that doesn't stick to your hands.

Note that the amount of flour given in the recipe is approximate, since flour density varies from one manufacturer to another. You may need a little more or a little less. The main thing is not to overwork the dough, so it doesn't get too stiff — otherwise the vareniki will turn out tough and bland. Put the finished dough in a bag and let it rest for 30 minutes.

Then knead the dough once more until it's smooth and pliable. Mix the sugar and starch in a two-to-one ratio. The starch will slightly thicken the juice the berries release as they cook. Wash the strawberries under running water and remove the hulls.

Divide the dough into three or four parts. Roll each part into a rope, then cut it into small pieces. Dust the pieces lightly with flour and roll them into rounds. Place a couple of strawberries on the sticky side of each round and add half a teaspoon of the sugar-and-starch mixture.

Pinch the edges of the dough round together and shape the varenik. Make all the vareniki this way. Lay them out on a flour-dusted dish or board. If you're not going to cook them right away, put the vareniki in the freezer. Once frozen, carefully lift them off and transfer them to a bag for storage.

Now cook the vareniki. Salt the water and bring it to a boil. Drop the vareniki into the boiling water, stirring constantly with a slotted spoon. Cook for 2–3 minutes from the moment the water returns to a boil, no longer. Lift the vareniki out with a slotted spoon, add the butter, and sprinkle with sugar. Garnish with berries when serving, and serve with sour cream.
