Spaghetti with Chicken

A delicious dinner for the whole family with a taste of Italy. This is a really simple, quick way to cook chicken with pasta. But thanks to the spaghetti, the Provençal herbs, and the parmesan, it turns out almost like a real Italian dish. It's best to cook the pasta and the chicken at the same time.

  1. Step 1:

    How do you make spaghetti with chicken? Get the listed ingredients ready. The spaghetti is roughly half a standard package. If you have a big family, double the amounts. I use 20% cream; you can use 10%, but add 0.5 tsp of flour in step 5. For the dried herbs I use a "Provençal herbs" blend. The cheese is parmesan, but you can use any other hard cheese. The chicken fillet is fresh; if you're using frozen, thaw it first.

    Rinse the chicken fillet under cold running water and trim off any leftover bones and skin. Cut the fillet into small cubes. Lightly toss the chicken pieces in the herb blend. Season with salt and add ground black pepper if you like. Heat the vegetable oil in a skillet and fry the chicken pieces in it for 10 minutes, stirring constantly.

    Put a pot with plenty of water on the heat, bring it to a boil, add a spoonful of vegetable oil, lightly salt it, and drop the spaghetti into the boiling water. Stir right away, stir again once it returns to a boil, and stir a few more times as it cooks. Drain the cooked pasta in a colander and put it back in the pot so it doesn't cool down.

    Move the cooked chicken to a separate plate. Into the same skillet you fried the meat in, add the peeled garlic. I add the cloves whole, since I don't want them to stay in the sauce. If you do want bits of garlic in the sauce, put it through a press and leave it in. Fry the garlic in the oil for a few minutes, until fragrant, then take the garlic pieces out.

    Pour the cream into the skillet, stir, turn down the heat, and cook for another five minutes. Add the butter and stir, waiting until it melts completely.

    Grate the cheese and add it to the cream, stirring constantly so it spreads evenly through the sauce instead of clumping. Simmer, stirring, for a minute or two, turn off the heat, cover with a lid, and let it sit.

    Put the hot cooked spaghetti on a plate, spoon the sauce over it, and scatter the fried chicken pieces evenly on top. Serve the dish hot. A glass of white wine goes perfectly with an Italian dinner like this.
