Creamy Gelatin Dessert
A stunning, tender, and lovely-tasting jelly-like cream! It works not only as a dessert on its own, but also as a filling for crêpes and tartlets, or as a layer in multilayered pastries and cakes.

Step 1:
Let's prepare the ingredients. For this dessert we need only the egg yolks; save the whites for other dishes. Beat the yolks with a blender or mixer into a thick, foamy mixture.

Set the egg mixture over low heat. Pour the milk into it in a thin stream (use whatever fat content you prefer). Heat the mixture, stirring constantly, for 10 minutes, but don't let it boil. Turn off the heat.

Step 3:
In a separate bowl, whip the sour cream with the vanilla and sugar. I used 30% sour cream. Adjust the sugar to taste. Instead of sour cream, you can use plain yogurt or quark, depending on your taste and how rich you want the dessert.

Step 4:
In a third bowl, soak the gelatin, preparing it according to the package directions. I used ordinary granulated gelatin; once it's swollen, dissolve it over a water bath or low heat (you can also use the microwave). The key is to keep the gelatin mixture from boiling, so it doesn't lose its setting power.

Step 5:
If needed, strain the gelatin mixture through a small sieve and let it cool a little. Combine it with the milk-and-egg mixture and stir. Let the mixture cool to room temperature.

Step 6:
Add the whipped sour cream to the gelatin-and-milk mixture and mix thoroughly again, or blend it. Don't pour a hot gelatin mixture into the sour cream, or the sour cream may curdle.

Step 7:
Spoon the prepared cream into dessert cups and refrigerate until set — a couple of hours is enough. Take the dessert out of the refrigerator; you can sprinkle the top with grated milk or dark chocolate, or with crushed nuts. Coffee syrup also pairs well with it. Of course, this treat is fairly rich, but it's tasty, nourishing, and wholesome. Enjoy!
