Step-by-step cooking

Cooking time: 1 h
  1. Step 1:

    Step 1.

How to make dumplings with frozen cherries? Prepare the products for making the dough. Flour and water must be measured in one glass, then you will not need to add flour in the process.

  2. Step 2:

    Step 2.

Take a deep enough bowl so that it is convenient to knead in it. Sift flour into it. This will saturate it with air, and the dough will be even more tender and softer. Add salt to the flour, mix well.

  3. Step 3:

    Step 3.

Make a hole in the center of the flour. Pour the broken egg and vegetable oil into it. Using a fork, lightly shake the egg and butter with flour. Do not immediately try to knead the dough with this, it will not work, there is too little liquid component. You just need to mix the egg and that's it.

  4. Step 4:

    Step 4.

Boil water, pour boiling water into a glass. And immediately, just so that more bubbles go through the water, pour boiling water into the flour. Be sure to put a glove on your hand, it's very hot. When you pour out the water, actively stir the flour with a fork. Thus, the flour will be brewed, gluten will develop in it very quickly, and the dough will become very elastic and obedient.

  5. Step 5:

    Step 5.

When all the water is poured in, knead the dough with a fork, it's hot, careful! But it will cool down pretty quickly, and hands will be used. At first it will seem that there is too much flour and not enough liquid. Do not rush to pour more water, gradually all the flour will interfere and the dough will become homogeneous.

  6. Step 6:

    Step 6.

At the end, put the dough on the work surface. The dough is absolutely not sticky, you don't even have to sprinkle it with flour. Knead the dough finally to a smooth state and assemble into a ball. Put the dough in a bowl, cover with a towel and leave to rest for 20 minutes.

  7. Step 7:

    Step 7.

While the dough is resting, prepare the filling. Do not defrost the cherries! This is the first secret of "non-flowing" dumplings. The second secret is starch. When cooking, the juice from the cherry will mix with starch, thicken and will not leak out.

  8. Step 8:

    Step 8.

    Mix sugar with starch.

  9. Step 9:

    Step 9.

Divide the leftover dough into 4 parts. You will work with one, put the other three back in the bowl.

  10. Step 10:

    Step 10.

Roll out the dough into a circle several millimeters thick. Here I still had to add a little flour, the dough became even softer after lying down.

  11. Step 11:

    Step 11.

Cut out the circles using a special mold or glass.

  12. Step 12:

    Step 12.

And just now take out a part of the frozen cherries, about 1/4 part. Take a circle, pour 1/3 teaspoon of a mixture of sugar and starch into the middle. Put some cherries. My dumplings fit 2 or 3 berries, depending on the size.

  13. Step 13:

    Step 13.

Seal the dumpling in the form of a pie. You can additionally strengthen the edge with a pigtail. But I was in a hurry at the end and did not twist. As a result, the dumplings still did not fall apart. Just with a pigtail is also beautiful.

  14. Step 14:

    Step 14.

As soon as you make the first batch of dumplings, put them on a board sprinkled with flour and put them in the freezer. Or cook immediately. It is not necessary to keep them warm for a long time - the cherry will melt and flow. Proceed to the next batch.

  15. Step 15:

    Step 15.

Cook dumplings in salted water. Throw them into boiling water, be sure to mix gently so that the dough does not stick to the bottom. After boiling, cook for 3 minutes. All the dumplings should pop up. Remove the dumplings to a plate with a slotted spoon. Serve with butter or sour cream. Enjoy your meal!

A very successful recipe! Starting from the dough, ending with the filling. Not a single dumpling!!! when cooking, it did not flow. I have never had such a thing. Usually half of the cherries ended up in a saucepan, and the dumplings themselves turned blue and lost all their beauty. Even with fresh cherries, I will cook like this, with starch and sugar inside each dumpling, and not immediately into the cherry.
I will use the dough for dumplings with other fillings and for dumplings. It is very elastic, perfectly molded and tastes good.

Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.

Be prepared for the fact that you may need more or less flour than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!

For cooking, it is better to use filtered or bottled water that is neutral to taste. If you use tap water, keep in mind that it can give the dish an unpleasant characteristic taste.
