Homemade Grated Prepared Horseradish

A spicy, zesty preserve for all sorts of dishes. Homemade grated prepared horseradish always comes in handy when you want something spicy with soup or a hot dish. It makes a wonderful sauce or marinade, and it can also be served as an accompaniment to aspic.

    How do you make prepared horseradish? Gather all the ingredients you'll need for homemade grated prepared horseradish. Wash the horseradish root thoroughly to remove soil and debris. If the root was dug up a while ago, soak it in cold water for a few hours to firm it up.

    Peel the horseradish roots thoroughly. You can simply scrub the thin roots with a steel dish scrubber, and peel the thick parts with a vegetable peeler.

    Rinse the horseradish roots and cut them into thin pieces.

    Put the pieces of root into a blender, or you can use a meat grinder with a fine plate.

    Grind the horseradish root. If you're using a meat grinder, put a bag over its outlet and tie it tightly with string or secure it with a rubber band so you don't end up in tears.

    Put salt in hot water, about 50°C. Use coarse salt, since it's easy to over-salt with fine salt.

    Add the sugar to the salted water and stir.

    Pour the water solution into the bowl of grated horseradish and mix.

    Adjust the finished horseradish to taste. If you like, you can blend it again until it's smooth and more delicate. To make the flavor milder, you can add 1-2 tablespoons of odorless vegetable oil.

    Spoon the finished prepared horseradish into sterilized jars all the way to the top.

    Close with boiled lids and put them in the fridge. This preserve keeps in the fridge for 1-2 months. If you're planning to store it longer, add 1-2 tablespoons of 6% table vinegar, but go by your own taste.

  • For making this, it's best to use filtered or bottled water that's neutral in taste. If you use tap water, keep in mind it can give the dish an unpleasant off taste.
  • Since everyone's tolerance for salt, sweetness, bitterness, heat, acidity, and spice is different, always add salt and sugar to your own taste!
  • Instead of sugar, you can use a sweetener.
