Marshmallow Mousse with Strawberries and Wild Strawberries

A real treat — the kids will love it. I found this mousse recipe on a foreign website, translated it, and gave it a try. I had a bumper crop of wild strawberries this year and needed to use them up fast.

Cooking method

    Gather your ingredients. For this marshmallow mousse with strawberries and wild strawberries you'll need: vanilla marshmallows (strawberry ones work too), strawberries (fresh or frozen — mine are frozen), heavy whipping cream (33–35% fat), water, sugar, and wild strawberries.

    Wash and dry the strawberries, hull them, and cut them into small pieces. If they're frozen, thaw them first and save any juice they release.

    Wash and dry the wild strawberries and remove the stems.

    Put the cut strawberries in a saucepan, add the sugar, and pour in the water. Cook over medium heat for 3–5 minutes until the berries soften.

    Blend the berries with an immersion blender into a smooth purée.

    Cut the marshmallows into pieces.

    Add the cut marshmallows to the hot strawberry mixture and blend again.

    Let the mixture cool to room temperature.

    Whip the chilled cream into firm, stable peaks.

    Gently fold the whipped cream into the strawberry purée, taking care to keep the mixture light and airy.

    Set aside a few wild strawberries for garnish and fold the rest into the marshmallow-cream mixture.

    Spoon the marshmallow mousse into dessert glasses and refrigerate for 2 hours.

    Before serving, garnish the mousse with the reserved wild strawberries, marshmallow pieces, and mint.

  • Depending on how sweet your marshmallows are, you may not need any sugar at all — so taste them before you cook the strawberries. If they're moderately sweet, go ahead and add the sugar. If they're very sweet, add little or none, or the dessert will end up cloying and you won't taste the berries at all. I've made marshmallow cream before, and fruit in marshmallow cream too. This recipe is similar, with similar ingredients, but the method is a little different: the marshmallows go into the hot strawberries. The original recipe said you can just melt them into the hot mixture without blending, and I tried that at first — but apparently our marshmallows aren't like the ones abroad and don't melt, so I had to blend them in.
