Lychee Panna Cotta Jelly Cups
An incredibly delicious, beautiful dessert for the family you love! These lychee jelly cups are about as easy as desserts get, yet the result is impressive — they look gorgeous and taste amazing. Truly summery and refreshing: a tender, melt-in-your-mouth panna cotta on the bottom, topped with jelly studded with fragrant, sweet lychees. For best results, use good-quality sheet gelatin that dissolves cleanly. Fresh lychees are best, but canned will do in a pinch.

- We'll make the panna cotta first, then the jelly. Let's get started. Cover the gelatin with a little water and let it sit for 5 minutes to swell. Pour the milk into a saucepan, set it over low heat, and warm it through — but don't let it boil! Add the softened, squeezed-out gelatin and stir until fully dissolved. Next, add the cream and sugar. Bring the mixture to a boil, take it off the heat, and let it cool for about 7 minutes, then stir in the vanilla extract. Once it's cooled to room temperature, divide it among six small glasses or dessert cups. Refrigerate the cups for at least 1 hour (longer is fine; 1 hour is the minimum). Soak the gelatin again in cold water for 5 minutes. Meanwhile, pour water into a small saucepan, add a pinch of red food coloring and the sugar, stir, and set over low heat. Pour in the rose water. Squeeze out the gelatin sheets, add them to the pan, and stir until fully dissolved. Cool to room temperature. Peel the lychees, halve them, and remove the pits. Take the cups out of the fridge — the panna cotta should be set. Place three lychee halves cut-side down in each cup, pour the jelly over the top, and refrigerate for at least another half hour. Once that time is up, the dessert is ready to serve. Enjoy!
