  • Making amaranth energy bars is a real pleasure! Sound intriguing? Let's start cooking and you'll see exactly what I mean. :) First, the amaranth needs to be popped. Here's how: set a large skillet over the heat and let it get good and hot. Once it's hot, add the amaranth and cover with a lid. The grains will burst like popcorn — like little fireworks. Don't keep them on the heat too long; a couple of minutes is plenty, and shake the pan now and then. There's no need to add any oil. Transfer the popped amaranth to a bowl. Chop the hazelnuts into a few pieces and add them, then add the cranberries and all the seeds. Add a little salt and mix well. In a small saucepan over low heat, combine the syrups, honey, sugar, pumpkin seed oil, and vanilla extract. Stir and warm for about 30 seconds — it's important that the mixture never comes to a boil. Now stir all the dry ingredients into this mixture, mixing thoroughly. Line a baking sheet with parchment and spread the mixture onto it (you can also use molds, such as silicone ones). Let the bars cool, then refrigerate them — right in the molds — for two to three hours. After chilling, the bars will be firmer and hold their shape better, while still staying nice and crumbly. Cut the finished bars into smaller portions, wrapping each in parchment or plastic wrap. They keep beautifully in the fridge for 3–4 days. Enjoy!
