Mermaid Salad

    Cut the crab sticks into thin strips to mimic strands of seaweed.

    Cut the eggs into thin strips as well.

    Grate the cheese on the medium holes of a box grater.

    Sometimes the seaweed strands are too long or you get wide pieces — just cut them down into thin strips.

    Chop the fresh herbs. I use green onion, but feel free to use whatever herbs you like.

    Put all the ingredients in a bowl.

    Toss to combine. Add salt if needed — usually the salt from the seaweed is plenty.

    Dress with oil. Some folks love this salad with mayonnaise — dress it however you like it best.
