  • This dish is uncomplicated but very, very tasty, and it comes together fast. Start with the prep: peel and finely chop the red onion and set it aside in a bowl; crumble (or finely chop) the feta into a separate medium bowl; wash and pat dry the herbs, then finely chop them. Use any herbs you like — dill, parsley, tarragon, and chives all work well, and a mix is nice too. Now cook: set a medium skillet over medium heat, add the olive oil, and heat it well. Add the onion and sauté, stirring, until softened, about 4 minutes. Add the spinach — not all at once, but in small handfuls, cooking each until wilted before adding the next. Drizzle everything with lemon juice, season with salt and freshly ground black pepper, stir, and take the pan off the heat. Stir the spinach mixture into the feta — the filling is ready. Lay a crêpe on the work surface, spoon a quarter of the filling in the center, and fold the crêpe in half, then in half again. Repeat with the remaining crêpes and filling. Return the skillet to medium heat, add the butter, and stir until melted. Add the folded crêpes and cook until golden, then flip and brown the other side. Transfer to plates and sprinkle with the fresh herbs. Serve hot. Enjoy!
