  • Even though testicles are an organ meat, they're considered a delicacy. They don't have the strong off-odor of, say, kidneys. Their makeup is worth noting: they're rich in vitamins and useful trace minerals, plus a good amount of easily digestible protein. Lamb testicle dishes are common in the Caucasus and Central Asia, where they're fried with onion and garlic and served with couscous. In this recipe they're grilled and served with a sauce — pick whichever sauce you like. 1. Rinse the lamb testicles under running water, then clean them. It's not hard: make a slit down the middle, right along the vein, and peel off the membrane by turning it inside out. 2. Put the cleaned pieces in a deep bowl and cover with milk. Leave at room temperature for about an hour. 3. Drain them in a colander. 4. Cut them into pieces, depending on their size — halved lengthwise, or into three. 5. Season with salt and ground black pepper. 6. Cut some fat-tail lamb fat into medium cubes. 7. Thread the pieces onto skewers, alternating with the lamb fat. 8. Grill over hot coals for about 5–7 minutes, until done, turning the skewers so each piece cooks evenly all over. Enjoy!
