Breaded Cabbage-and-Cheese Envelopes
A great, quick, hot cabbage dish. Give it a try!

Step 1:
THE BASE: Cut the core out of the cabbage head. Set the head on a plate and microwave it for 5–7 minutes, then take it out and peel off the leaves. Unwrap the leaves slowly and carefully. If they don't come off easily, microwave for another 2–3 minutes. The leaves should be soft and nearly cooked. Or you can simply boil the whole head in boiling water.

Trim away the thick ribs—or pound them flat with a meat mallet.

THE FILLING: Cut the cheese into slices. You can also add mushrooms, sausage, ham, and so on to taste.

THE ENVELOPE: Put the cheese on a cabbage leaf and fold it up.

Step 7:
Add the milk and salt to the eggs and beat with a fork or whisk. Dredge the cabbage envelope in flour.

Dip it in the egg.

Roll it in breadcrumbs.

Step 10:
Fry the envelopes in oil over low heat until well browned on both sides. Set them on a paper towel to blot excess oil.
