Cooking method
- Run the meat through a grinder. Whip the ground pork with a mixer. Season with salt and pepper, then beat again. Add the sour cream and beat. Add the egg and beat once more. Shape the mixture into balls about the size of a small apple. Place the balls in a buttered baking dish. Bake in an oven preheated to 400°F (200°C) for 35–40 minutes. Make the sauce: pour the juices that have collected in the dish into a pan. Bring to a boil, add a spoonful of flour, and stir quickly. Strain through a fine sieve. Serve with the soufflé.
