Unleavened tortillas in the oven

A simple recipe for ordinary tortillas is an excellent basis for snacks. I found the recipe for these tortillas in an old cookbook of Soviet times. They somewhat resemble khachapuri, but it is rather an Armenian dish – they have unleavened dough cakes can be found much more often.

Usually, when kneading the dough for tortillas, I add kefir, but a flatbread made of unleavened dough tastes better with milk. Flour must be sifted, add milk and a pinch of salt. I try to knead the dough thoroughly – so that there are no lumps and nodules. The result is a soft, even tender dough. It may be a little softer than when cooking dumplings.

Be prepared for the fact that flour may need more or less than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!

Now I will do the filling, and wrap the dough with cling film and put it aside for half an hour.
Usually a flatbread made of unleavened dough is prepared with various fillings – with cheese, potatoes and even meat. But the basis is always made up of various herbs. Armenians are famous for the abundance of spices in their food. I'm also a big fan of all kinds of herbs and additives, so I add greens to unleavened dough cakes almost in half with cheese. Parsley, dill, green onions and even cilantro are used. The greens should not let the juice out, so I first rub the cheese, and then finely chop the greens, mix it with the cheese and add hot pepper and garlic. Please note that cheese can be of different degrees of salinity. Sometimes, before cooking something with cheese, it has to be soaked for several hours in water so that the excess salt goes away. Therefore, before cooking, try your cheese and focus on your own taste preferences: if the cheese is moderately salty, then you can cook without soaking (do not forget that we add herbs without salt and the dough is not salty either). In any case, adjust the recipe to your products!

I divide the dough into pieces and roll it into large thin pancakes. I put the filling in the center, add a little salt and wrap the tortillas. Here's another little tip – it's better to wrap the edges of the tortilla once more, otherwise they will disperse during frying.
True, it is not necessary to fry flatbreads from unleavened dough. For this unusual meal, you need to preheat the oven and cover the baking sheet with a sheet of paper – you need to bake tortillas without oil at all. At least that's what the recipe says. The temperature is about 180C for about 20-25 minutes. 

In order for the oven to have time to heat up to the desired temperature, turn it on in advance (10-20 minutes before cooking).

Keep in mind that everyone has different ovens. The temperature and cooking time may differ from those specified in the recipe. To make any baked dish successful, use useful information about the features of ovens !
