Step-by-step cooking
Step 1:
We will prepare all the necessary ingredients so that everything is at hand at once during the cooking process. Greens (any one will suit your taste) must be washed and discarded in a colander in order to allow the water to drain.
Step 2:
For the filling of this aspic pie, the best option would be an island cheese with a pronounced taste. Tilsiter, in my opinion, is perfect. It is necessary to grate it on a coarse grater.
Step 3:
Boil the chicken breast in salted water until tender, let it cool down a little and finely chop it across the meat fibers.
Step 4:
The greens, meanwhile, have already managed to dry out. We cut it quite finely.
Step 5:
Mix the ingredients for the filling: chicken, cheese and herbs. Add a little salt to taste.
Step 6:
Chicken eggs are washed in warm water. In a high whipping bowl, add all the milk, salt, sugar and break both eggs there. Beat with a mixer until the mixture increases slightly in volume, that is, until good, stable bubbles.
Step 7:
Add baking powder. And in two or three passes, we introduce flour, passing it through a sifter (or sieve) in parallel. Mix the dough with a mixer until smooth, without lumps. The dough should eventually turn out to be thick, but at the same time quite liquid, because this is a filling pie! Preheat the oven to 200 degrees.
Step 8:
Grease the mold with a drop of vegetable oil. And pour half of the dough into it. From above, we distribute the entire filling evenly.
Step 9:
It remains to pour the remaining dough on top. Make sure that the whole pie is covered, without voids. You can gently tap the mold on the work surface so that all the cavities inside the pie are evenly filled with dough.
Step 10:
The oven is already fully ready to work. We send our pie there for 30-40 minutes (depending on the power of your oven). We check the readiness with a wooden skewer. We pierce the pie in the center, and if the skewer comes out completely dry, then our pie is ready.
If you ask me which pies I like the most, perhaps I will answer: "Of course, aspic!"
As a basis, as a rule, I take chicken breast or ham, as well as cheese. Spicy, spicy. You can add fried mushrooms or red bell pepper. And any greens: parsley, dill, even green onions. There are a lot of options, and the result is always excellent.
I prefer to serve such pies with sweet tea for breakfast or afternoon tea.
