Potato Soup with Chicken
Simple, quick, and tasty — for any day! This potato soup with chicken comes out rich yet still light. You can make it with any meat, or with a vegetable or mushroom broth. A great dish for a family lunch!

Step 1:
How do you make potato soup with chicken? Gather the ingredients. You can use any part of the chicken for the soup. Peel the potatoes ahead of time and rinse off any dirt.

Cover the prepared chicken with water and set it over heat. Bring to a boil. As it heats, foam will rise — skim it off. Cook the chicken for 20–30 minutes over low heat. Lightly salt the broth.

Step 3:
Once the chicken is cooked, lift it out of the broth and pull the meat off the bones. Strain the broth. If you, like me, like the chicken very tender, return it to the broth at this point. Otherwise, add the meat right at the end of cooking. Put the pot back on the heat and bring it to a boil.

Cut the peeled potatoes into small pieces and add them to the boiling broth. Cook for about 20 minutes.

Meanwhile, make the sautéed vegetables. Peel and rinse the onion and carrot, then prep them. Grate the carrot and finely chop the onion. Pour a little vegetable oil into a hot skillet and add the chopped onion and carrot. Sauté the vegetables over low heat for 3–4 minutes.

Add the sautéed vegetables to the pot of soup. Stir in the garlic, pressed through a garlic press. Season with salt and spices to taste — a little ground pepper is plenty. Simmer everything together for 3–5 minutes, then take the pot off the heat.

The potato soup with chicken is ready! Ladle it into bowls and serve. Enjoy!
- For cooking, it's best to use filtered or bottled water with a neutral taste. Tap water can leave the dish with an off, characteristic aftertaste.
- You can swap the chicken for turkey or any other meat you like. Keep in mind that the cooking time and calorie count will change.
- Since everyone's preference for saltiness, sweetness, bitterness, heat, acidity, and spiciness is different, always add spices and seasonings to your own taste! And if you're using a seasoning for the first time, remember that some are especially easy to overdo (chili pepper, for one).
