- For true sweet lovers, here's a recipe for melon jam — it comes out very sweet and fragrant, almost like honey. Anyone with a sweet tooth will be delighted. It's lovely with fritters, pancakes, and the like. The jam takes 3 days to make, but the process couldn't be simpler, and the result is well worth it. Peel and seed the melon, cut it into small cubes, put it in a lidded container (a large pot works well), and cover with the sugar. Shake the pot vigorously to mix and leave it overnight; by morning the melon will have released its juice. Stir again and let it stand until evening. In the evening, set it over the heat and let it boil for 5–7 minutes so the sugar dissolves, then leave it again until morning. In the morning, boil it for 10 minutes and set it aside until the next morning. The following morning, set it over the heat and cook for 15 minutes, stirring constantly, adding the citric acid right at the end. Let it cool a little and transfer it to jars. You should end up with a smooth, thick jam studded with pieces of melon. Kids especially love this one — it has a bright tang and an unbeatable melon aroma.
