- The big difference between this recipe and the classic one is that it doesn't call for egg whites — or eggs at all. Since the usual egg-white glaze relies on raw eggs, a lot of people worry about salmonella, and this recipe takes that off the table entirely. On top of that, a gelatin-based glaze like this one is sturdier and won't crack over time once it's out in the open air. Start by preparing the gelatin: tip it into a cup and pour in 1/3 of the water. Let it sit for a while until it swells — you'll see little gel beads form on the surface. While the gelatin blooms, make the sugar syrup. Put all the powdered sugar in a small saucepan, pour in the rest of the water, set it over low heat, and stir until the mixture is smooth and even — keep stirring constantly so the sugar doesn't scorch. Take the syrup off the heat and let it cool slightly. Pour the syrup into the bowl of a mixer and add the bloomed gelatin. Add a little vanilla for a pleasant aroma. Pour in a few drops of lemon juice (freshly squeezed is best) and stir everything together well. Now beat the mixture with the mixer, starting on low and gradually building up the speed. Keep beating until you have a snow-white glaze of the right thickness. Spread the finished glaze onto your homemade kulich right away — otherwise it will set and become very hard to work with.
