Dried Seaweed Salad
Give this tasty seaweed salad a try! Homemade dried seaweed salad can taste every bit as good as the version at your favorite café or restaurant. All you need is a package of dried seaweed, which you'll find in the Asian or international section of the supermarket. A few spices from the same aisle take the dish to a whole other level — flavorful and a little exotic.

- Start by prepping the dried seaweed. Take it out of the package, rinse it, and put it in a large bowl or pot. Separately, warm some clean water until it's lukewarm (don't boil it) and pour it over the seaweed. Let it sit for 10–15 minutes — it will swell and grow in volume. After that, be sure to rinse it again with fresh water, since it can hold tiny grains of sand from the sea, then drain off the excess through a sieve. 2. In a separate pot, bring clean water to a boil and drop in the rinsed seaweed. Boil for a minute, take the pot off the heat, rinse the seaweed under cold water, and drain it in a sieve or colander. 3. Peel the carrot, rinse and dry it, then cut it into thin strips or shred it on a julienne (Korean-carrot) grater. 4. Rinse, dry, and finely chop the fresh cilantro. 5. In a salad bowl, combine the cooked seaweed, shredded carrot, and chopped cilantro and toss well. 6. Make the dressing separately: pour the cooled broth (any broth simmered with plenty of spices) into a small bowl, add the sesame oil, tahini, and the chili-infused vegetable oil (olive oil works well). Whisk everything together by hand until well blended. 7. Pour the dressing over the salad, season with salt to taste, and toss again. 8. Toast the sesame seeds in a dry nonstick skillet with no oil, stirring constantly until lightly golden and fragrant, then scatter them over the finished salad. Serve this dried seaweed salad cold, as a side to any main dish. Enjoy!
