Chickpea Flour Hummus
A simple chickpea spread that's a breeze to make! Hummus made from chickpea flour is a wonderfully smooth, creamy dip with a rich, nutty flavor. Serve it with fresh, crusty bread, or pair it with homemade pita or tortilla chips. Hummus and chips make a great appetizer for a get-together with friends.

- In a small saucepan, whisk together the chickpea flour and water (use drinking water), mixing until smooth and lump-free. You decide the consistency — hummus can be thinner or thicker to taste. Set the pan over medium heat and bring the mixture to a boil, stirring constantly. Take it off the heat right away and let it cool. Once it's down to room temperature, add the tahini and paprika, then pour in the olive oil and lemon juice (freshly squeezed). Peel the garlic and mince it very finely with a knife, grate it on the finest grater, or put it through a press, then add it to the chickpea mixture. Sprinkle in the ground cumin and blend everything well with an immersion blender. Add the salt, blend again, and taste. Add more salt if needed — and feel free to fine-tune the flavor with extra lemon juice, garlic, or cumin, or any other spices you like. If you want a silkier texture, add a little more water and blend again. Heat a dry skillet over medium heat (no oil), add the sesame seeds, and toast them, stirring constantly, until lightly golden and fragrant. Spoon the hummus into a nice serving bowl. Drizzle it with olive oil and sprinkle with the toasted sesame seeds and a little za'atar. You can garnish however you like, but don't skip the drizzle of olive oil! Serve the hummus with fresh, crusty bread, or with pita, pita chips, or tortilla chips. Hummus and bread make a great appetizer, or a tasty, satisfying snack any time of day. All done — enjoy!
