Step 1:
Prepare the ingredients. To prepare thin pancakes on ryazhenka, we will need: flour, ryazhenka (I have 4% fat content, but you can have less fat content); large eggs, sugar, water (boiling water), soda and salt.
Step 2:
Combine eggs, sugar and salt in a deep bowl. Mix everything until smooth. It is not necessary to beat strongly so that bubbles do not appear on the surface.
Step 3:
Pour in the fermented baked milk at room temperature and mix again.
Step 4:
Pour soda. Stir.
Step 5:
Sift flour and add parts to the dough. Stirring after each serving of flour to avoid the appearance of lumps.
Step 6:
Pour boiling water into the dough with constant stirring in a thin stream. You need to stir quickly to avoid the appearance of lumps when brewing the dough.
Step 7:
Add vegetable oil and mix thoroughly so that the oil is completely dispersed over the dough. If the consistency of the dough is too thick, you can add a little more boiling water. Leave the dough for 10-15 minutes to cool down.
Step 8:
Heat the frying pan and grease with vegetable oil. Pour out a little dough and fry the pancake on both sides until golden brown. To fry the following pancakes, you do not need to lubricate the pan with oil.
Step 9:
Stack the finished pancakes on top of each other. If desired, you can smear each with butter. Serve pancakes with any jam, jam, fresh berries and fruits, or simply with sour cream or condensed milk. Enjoy your meal!
