Crab Stick, Tomato, and Cheese Salad
Quick to make, very tasty and healthy, and no mayonnaise! This crab stick, tomato, and cheese salad is so light you could make it every day. It works for dinner or breakfast and goes great alongside any meat dish. It's an appetizer and a quick snack all in one!

Step 1:
How do you make a salad with crab sticks, tomatoes, and cheese? Gather the ingredients. Instead of crab sticks, you can use shrimp or crabmeat. I'm using feta, but you can use any cheese you like. And if you prefer, swap the parsley for dill. Wash and dry the vegetables and herbs in advance. Thaw the crab sticks if needed.

Step 2:
Cut the crab sticks into rounds.

Cut the feta, or any other soft cheese, into medium cubes.

Cut the tomatoes into medium cubes or quarters. You can swap large tomatoes for small cherry tomatoes - just halve them.

Peel the garlic and press it through a garlic press.

Finely chop the parsley (or dill, or other herbs of your choice).

Get the ingredients for the dressing ready. I'm using olive oil, but any vegetable oil will do. You can replace the lemon juice with lime juice or a lemon-based sauce.

In a separate bowl, combine the olive oil with the lemon juice, salt, and pepper. Whisk the mixture lightly with a fork or whisk until smooth.

Put the sliced crab sticks, feta, tomatoes, parsley, and garlic in a salad bowl.

Pour the dressing over the salad and toss gently.

- How do you buy good crab sticks? Always check the product's expiration date. Surimi (minced white fish) should be first on the ingredient list. Important! Don't buy the product if there's frost on it - that's a sign it's been refrozen. Fresh sticks should be free of gray and yellow spots, firm, and slightly moist. If the product is sticky, it's spoiled.
