Chanterelles in Sour Cream

A delicious dish made from one of the brightest, prettiest edible mushrooms. Chanterelles in sour cream can be served as a side for meat dishes or as a main course. Pair them with boiled potatoes — whole chunks or mashed — or with steamed rice. It's wonderful either way!

  • Chanterelles are edible mushrooms, easy to recognize by their vivid color, which ranges from pale yellow to deep orange. Instead of a distinct cap, they have a funnel-like shape with wavy edges, and a stem that tapers toward the bottom. They give off a slightly fruity, faintly sour aroma. Because they're so brightly colored and tend to grow in large clusters, they're easy to spot — a walk in the woods after rain can yield a big haul. Their flesh is firm, never wormy, and holds together well without breaking or crumbling. Beware of false chanterelles, which are inedible: the true ones have a pleasant fragrance and a golden, uneven color, while the false ones are a flat, uniform orange with hollow, thin stems and an unpleasant smell.
