Thin Whey Pancakes

Tender, thin pancakes made from a loose whey batter. Unlike classic thin pancakes, a whey batter uses fewer eggs and includes a little baking soda, so the pancakes come out more tender and pliable.

    Keep whisking for another half minute.

    Stir the batter well so the baking soda starts to react with the whey.

    Stir the loose pancake batter well until smooth and let it rest for about 10 minutes.

    After 10 minutes, start frying the pancakes. Brush the pan with a little vegetable oil and heat it up.

    Cook the pancake over medium heat for about half a minute on one side.

    Then gently lift the pancake by the edge with a spatula and flip it over.

    Transfer the pancake from the pan to a flat plate.
