Beer Crêpes
Don't let the beer in the batter throw you off — these turn out delicious! You can use either light or dark beer. I went with dark for a deeper, richer color. You can taste the beer in the crêpes, but only faintly — and it's what gives them all those pretty little lacy holes.

Cooking method

Step 1:
Measure out your ingredients.

Beat the eggs with a pinch of salt.

Pour in the milk and beer, then add the sugar and baking soda. Stir until smooth.

Sift the flour and add it to the batter.

Whisk until smooth and lump-free. Lots of tiny bubbles should form on the surface.

Finally, stir in the vegetable oil and mix once more.

In a skillet with a little hot oil, cook thin crêpes, browning them on both sides.
