- This recipe is for fans of exotic Vietnamese cooking. Some dishes from that part of the world might seem unusual to a Western palate, but this one is very approachable. I'd definitely recommend giving it a try. To start, thread the rinsed and dried shrimp onto wooden skewers. Sprinkle the shrimp with pepper and a little salt. Now peel the mango and cut it into large chunks. Heat the vegetable oil in a skillet and lay the mango pieces in flat side down. Sear the mango on one side until a golden crust forms, about 2–3 minutes, then transfer to a plate. Now set the shrimp skewers in the same pan and sear on all sides for 4–5 minutes—the skewers make it easy to turn the shrimp in the pan. When the shrimp are cooked, lay the skewers right on top of the mango. Finish with a light drizzle of olive oil and garnish the dish with green onion and lemon. Your shrimp with black pepper and seared mango are ready.
