Fluffy Whey Pancakes

Appetizing, fluffy pancakes make a wonderful morning breakfast! My family loves this recipe. Golden and dotted with little holes, they look so appetizing and smell wonderful.

    1. Take a deep bowl and beat the egg with the sugar and salt until foamy. Ideally all the ingredients should be at room temperature. The better you beat the batter, the fluffier your pancakes will be. 2. Use whey at room temperature and beat it in with the eggs. 3. Add the sifted flour, working it in a little at a time. Whisk and watch the consistency — it should be like a thick pancake batter. 4. Slake the baking soda with the vinegar or lemon juice, add it to the batter, and stir. The soda makes the batter fluffy and full of holes. Let the batter rest at room temperature until bubbles appear on the surface. 5. Stir the vegetable oil into the batter so the pancakes don't stick. That way you won't have to grease the pan for each one. 6. Heat the pan well, grease it with oil once, and ladle in the batter. Cook the pancakes over medium heat. Once they're browned on one side, flip and cook the other. Enjoy!
