Skinless Duck Breast with Apple and Raisins

  • Rinse the duck breasts under running water, rub them with salt and pepper, and sprinkle thyme over the top. Let the meat sit for half an hour so it soaks up the flavor and marinates. Sear the breasts in sunflower oil on both sides, taking care not to overdry the meat — you're after a beautiful golden crust. Once they're cooked through, remove the breasts and add the soy sauce, honey, and butter to the juices left in the pan. Stir, add the raisins, and simmer for 2-3 minutes. Choose a baking dish, lay down a layer of thinly sliced apples, arrange the duck breasts on top, and pour the pan sauce over everything. Bake at 350°F (180°C) for half an hour. Slice the baked breast into pieces, arrange it nicely on a platter, and serve. Enjoy!
