- Prep the zucchini: wash and grate it. In a deep bowl, combine the flour, eggs, grated zucchini, and semolina; mix well and let it sit so the semolina can absorb moisture and swell. After 10 minutes, heat a skillet with vegetable oil. Season the batter with salt and pepper, stir, and quickly start frying pancakes. Then let them cool. In a separate bowl, mix finely chopped fresh herbs with grated cheese and garlic pressed through a garlic press. Slice the tomatoes into rounds and assemble the cake in this order: pancake, sour cream, cheese mixture, tomato slices, pancake. Keep layering all the pancakes this way, then top the final layer with grated cheese and garnish with tomatoes. Enjoy!
