Pear Mascarpone Cream with Grapes
This Italian cream will make your dessert even more delicious! I love Italian cooking — it never stops surprising me — and this is one of those dishes. Pear cream with grapes can be used as a cake filling in place of traditional frostings, or served on its own as a dessert.

Step 1:
Gather the ingredients from the list. I discovered this remarkably flavorful pear-and-mascarpone cream only recently.

Peel the pears, core them, and cut into medium cubes.

Put them in a skillet and set it over the heat.

Add the lemon juice and half the sugar. Simmer over medium heat until soft.

Take the pears off the heat, transfer to a separate bowl, let cool, and season with cinnamon. Chill the mixture in the refrigerator for a while.

Now take the washed grapes, halve them, and remove the seeds — or better yet, use seedless grapes from the start.

Grate the lemon zest on a fine grater.

Make the syrup: pour the remaining sugar into a skillet.

Add the cinnamon, lemon zest, and lemon juice.

Bring the mixture to a boil.

Then add the grapes and simmer for 2 minutes, stirring. Let cool.

Using a blender, blend the pears and mascarpone into a fluffy cream.

Spoon the pear cream into dessert glasses.

Garnish the top with grapes and drizzle with the syrup. If you don't have mascarpone, you can make your own: blend very high-fat cottage cheese with heavy cream until smooth, thick, and even, then add sugar, vanilla, a few drops of lemon juice, and dissolved gelatin. You'll end up with a tender, thick mixture that's almost mascarpone.
