Every year with the arrival of the Pancake Week I am looking for interesting pancake recipes to surprise loved ones and friends with something new. Two years ago I found a wonderful recipe for orange pancakes. They have been my son's favorite food ever since. We prepare pancakes as usual, mixing flour with salt and sugar, add half the norm of milk.
Mix until a homogeneous dough is obtained without lumps. Eggs, beat lightly and add to the dough, pour in the remaining milk, grated on a fine grater zest of one orange. And the very last one we add "Fanta". Let the dough stand for a while. I usually prepare the filling at this time: I grind cottage cheese with cream or sour cream with a blender, add sugar, vanilla to taste and whisk until smooth. The last ones I add are the orange cut into small cubes. The fabulous aroma of orange and vanilla spreads throughout the apartment. We bake pancakes in a well-heated frying pan, then fill them with stuffing, heat them up a little in the oven and serve them to the table. Orange pancakes can be made with purchased children's vanilla cheese. Then you just need to mash them and add the sliced orange. Bon appetit!
