- My grandfather brought home this recipe for Abkhazian-style meatballs from his time serving in the Caucasus. It's a delicious, out-of-the-ordinary dish from Abkhazian cooking that's perfect for entertaining — especially when you want to surprise your guests with something new. I make it for my family all the time. It's genuinely simple and won't cost you much time or effort. Here's how it goes: rinse the fresh beef fillet, then set it on the stove to simmer. Peel the potatoes. Rinse the raisins in hot water so they plump up and soften a bit — I go with dark raisins, for the simple reason that there's really no such thing as naturally white dried raisins. From the walnuts you'll only need the nutmeats. Then run the boiled beef, potatoes, walnuts, and raisins through a meat grinder. Add fresh parsley, rinsed first, and grind everything together thoroughly. Season the mixture with salt and pepper to taste — I usually reach for fine salt since it dissolves faster. Mix well and work in an egg; if the mixture feels too dry, add a second egg. Shape into small patties, roll them in breadcrumbs, and fry in refined vegetable oil. In a separate skillet, heat the olive oil, add raisins, and fry until they swell. Plate the finished meatballs, spoon the olive-oil-fried raisins over the top, and garnish with fresh herbs. Voilà — your Abkhazian-style meatballs are ready! Serve them on large lettuce leaves, dressed up with parsley, basil, and arugula. For a drink alongside, I'd suggest a dry Georgian or Moldovan red.
