Boiled Cauliflower
Simple and tasty! Perfect for a light lunch. A basic recipe for a simple, low-calorie side dish to go with fish, meat, or poultry. And if you'd like to turn it into a stand-alone or more filling dish, you can sprinkle the cauliflower with grated cheese or drizzle it with olive oil.

Step 1:
How do you make boiled cauliflower? Fill a pot of suitable size with water and set it over medium heat. At this point you can cover the pot with a lid so the water heats up faster. Bring the water to a boil.

As soon as the water boils, add salt to the pot to taste. I add a teaspoon of salt, but since everyone's taste is different, you may need a different amount.

You can use either fresh or frozen cauliflower. Fresh cauliflower should first be rinsed under running water and broken into florets. Be sure to check it for any pests. If you have frozen cauliflower, there's no need to thaw it. But sometimes it sticks together into one big clump, so it should be broken into florets too.

Step 4:
Lower the cauliflower into the boiling water and cook uncovered for about ten minutes after the water returns to a boil, over medium heat. The cauliflower should cook through well but not turn to mush. The cooking time is the same for both fresh and frozen cauliflower. If you like your vegetables slightly crisp, shorten the cooking time a little. It's said that covering the pot with a lid at this stage will turn the cauliflower yellow.

Step 5:
If you need to stir the cauliflower while it cooks, do so as gently as possible so you don't break up the delicate florets. I, for one, didn't stir the cauliflower at all while it cooked. By the way, the shorter the cooking time, the more nutrients the florets retain.

Step 6:
Tip the cauliflower into a colander and wait a couple of minutes for the water to drain. After this step, boiled cauliflower is served right away.
- Before serving, a boiled cauliflower side dish can be seasoned with your favorite spices, drizzled with olive oil, sprinkled with finely grated cheese, or simply garnished with finely chopped fresh herbs. Parsley or dill, for example, are ideal here.
