- Not long ago I came across a recipe for cheese-stuffed zrazy in a magazine. I made the dish and was thrilled with how it turned out, so if you'd like to try it, here's how it's done. Start by rinsing the chicken in cold water, patting it dry, and cutting it into pieces, then run it through a meat grinder or pulse it in a blender. Season the ground chicken with salt and pepper to taste, add the eggs, and mix well. Now make the filling: peel the onion, rinse it, and mince it finely. Grate the hard cheese on the fine side of a box grater. Combine the cheese and onion, season with pepper to taste, and stir in the mayonnaise. Take a piece of the ground chicken about the size of a small patty and flatten it into a round. Place a teaspoon of filling in the center, fold the edges up over it, and roll it into a ball. Repeat with the remaining chicken and filling. Set the zrazy in a skillet with hot oil and fry on all sides until golden and cooked through.
