Baked Meatball "Hedgehogs" with Rice

These are meatball "hedgehogs" without any needles! They're tender and light, and the grains of rice poking out give them a cute, spiny look that's every bit as appetizing as it sounds. My mom makes them all the time using the recipe I'm about to share.

Cooking method

    Start with the rice — long-grain works best here, since it holds its shape instead of turning mushy, and those firm grains are what become the hedgehogs' "spines." Boil it in twice its volume of water, let it cool slightly, and rinse it.

    ...and finely mince the onion and garlic, or run them through a meat grinder until they turn to a paste.

    Grind the pork and beef in a meat grinder. Season the combined pork-and-beef mixture with salt and ground black pepper,..

    ..then the carrot and onion.

    Now shape the mixture into small, neat balls, like meatballs.

    Stir the tomato paste into the broth.

    Set the hedgehogs in a lidded baking dish and pour the tomato broth over them. If you don't have a dish with a lid, just cover it with foil.

    Bake in a 350°F (180°C) oven for 50 minutes.
