Prepare the ingredients. For this dish, it is better to take beef tenderloin, the meat should be fresh. The meat is thoroughly washed, it is even better to soak it in cold water, leaving it for a couple of hours and changing the water several times to remove all harmful and blood. We take the pieces of meat out of the water and dry them on a paper towel.
Prunes are washed, put in a bowl and pour hot water. Leave it in the water for 15 minutes, let it steam. We take the prunes out of the water, dry them on a paper towel, cut them into several pieces if it is large.
In advance you need to prepare clay pots for baking. They need to be filled with cold water and left for a few hours. The pores in the clay walls will be saturated with moisture, which will evaporate during baking, which will make the dish especially tasty, the meat is soft and tender.
Let's cook vegetables. Carrots are washed, cleaned and cut into small cubes or straws. Onions are cleaned and cut with a knife into halves of rings.
Put the pieces of meat in the pan, turn on the fire and fry the meat without oil first, so that the excess moisture evaporates and the meat. Let it simmer in its own juice under the lid for about 10 minutes. then pour in vegetable oil and fry the meat until browned on both sides. Add prunes, onions and carrots to the meat, mix everything and fry over low heat for about 15 minutes so that the vegetables become soft. Add spices to taste: salt and ground black pepper. you can add some herbs or other spices, but it is better not to interrupt the taste and aroma that prunes give to the dish.
Lubricate the bottom of the pots with vegetable oil. We put meat and vegetables in pots so that they fill them by two-thirds. Fill with water or broth so that the liquid is flush with the contents of the pots. We put it in the oven and turn it on at 150 degrees. Bake for about 1.5 hours .
We take the pots out of the oven. If you serve the dish in pots, you can sprinkle grated cheese on top of it and put it in the oven for a couple of minutes so that a beautiful crust appears on top. Or put the meat with prunes on a plate and serve to the table.
