Smoked Sausage-Cheese Soup

    1. First, peel all the vegetables, wash them, and pat them dry with a paper towel. 2. Cut the peeled potatoes into medium dice and put them in a pot. Cover with clean cool water and set the pot on the stove. Bring the water to a boil over medium heat, drop in the whole peeled parsley root, then cover and reduce the heat to low. 3. Finely dice the onion, cut the garlic into thin slices, and grate the carrot. Pour the olive oil into a small skillet over the heat. Add the onion and garlic first and sauté over medium heat until fragrant, about a minute. Then add the grated carrot and keep cooking until the vegetables are soft and golden, then take the skillet off the heat. 4. Trim off any dark rind from the sausage cheese (or peel off its film) and grate the rest on the coarse side of a box grater. 5. Check the potatoes. Once they're soft, first pull out the parsley root (you won't need it anymore), then add the sautéed vegetables and the grated sausage cheese. Stir well to combine, and season with salt and black pepper to taste. 6. Add the thin instant "angel hair" vermicelli. Turn the heat back up to medium and bring the soup to a boil. Cook for another couple of minutes, then stir in the chopped fresh parsley and take the pot off the heat. 7. Let the soup rest, covered, for about 5-10 minutes to develop its flavor, then ladle it into bowls and serve. Garnish with chopped fresh herbs if you like. Enjoy!
