To prepare this marshmallow, you will need an aquafaba. This is a decoction or water in which some beans were cooked - for example, chickpeas or peas. This liquid by its properties may well replace eggs in your favorite desserts.

Aquafaba for marshmallows will need cold. That is, the day before it is necessary to cook chickpeas, drain the liquid from it and strain it through a fine sieve so that there are no extraneous inclusions in it. Place the liquid itself in a bowl or bowl of a mixer and beat at maximum power until it begins to thicken. It will take about 15-20 minutes, depending on the power of the kitchen unit.

As soon as the aquafaba begins to thicken, it is necessary to add sugar to it. It is better to do this in several stages, continuing to beat the mass. During this time, it will thicken and turn white. At the end, add lemon juice and vanilla for a pleasant aroma.

Separately prepare sugar syrup for marshmallows. To do this, stir agar-agar and water in another bowl. Transfer it to a heat-resistant dish and put it on a small fire. Cook agar-agar, stirring constantly, until thickened. Then introduce sugar and continue to cook until the formation of so-called threads, while not forgetting to constantly stir the syrup so that lumps do not form.

Pour the hot syrup immediately in a thin stream into a bowl with a whipped mass of aquafaba. At the same time, the resulting mass should be stirred well with a mixer, since agar-agar hardens very quickly.

Immediately transfer the resulting white mass into a pastry bag and squeeze out the marshmallows on a baking sheet with a special nozzle. It is better to cover the baking sheet with parchment beforehand.

Let the marshmallow stand for several hours until it finally hardens. Do not cover with anything.

If desired, ready-made marshmallows can be sprinkled with powdered sugar.
