- Break the farmer's cheese down into a smooth, fine, crumbly mass so the finished cheese has no white lumps of unmelted curd. Add a teaspoon each of salt and baking soda and mix the cheese well again. One teaspoon of salt makes for a mildly salty cheese; add more if you like it saltier. Add 2 eggs, mix again, pack it down, and let the mixture rest for 4–6 hours (if you're short on time, 2 hours will do). After 4–6 hours, you can melt the cheese. By now the curd mass is no longer loose; without stirring, drop it in small pieces into a heavy-bottomed (or cast-iron) skillet greased with butter and melt it completely. The result may turn out runny or sometimes stretchy — it depends on the fat content of the curd, the size of the eggs, and how long it sat with the baking soda. Stir the cheese mass gently over moderate heat; a brown crust will form on the bottom of the pan.
- Pour this hot melted cheese into a deep dish. Carefully lift the crust off the bottom of the pan before it sets and sticks — that crispy crust is a nice, tasty bonus. If you like, stir anise, dill, or raisins into the hot cheese — the flavor of homemade cheese can be whatever you want it to be! Leave the melted cheese in the dish, and once it has set, cut it into pieces of whatever size you like.
