Cooking method
- Wash the beef udder, cover it with cold water, and set it over the heat. As soon as the water boils, turn the heat to its lowest, cover the pot, and cook the udder for four and a half hours. Add salt and cook for another half hour. Take the udder out of the water and cut it into slices about ¾ inch (2 cm) thick. Season with salt and pepper. Dredge each piece of udder in flour, then in beaten egg, and finally in breadcrumbs. Fry the steak in hot oil for one minute on each side. Serve with vegetables.
